the process took 7 hours, but it was definitely tokyo-caliber. matthew jacob & i made ramen with braised pork belly, pickled shiitake mushrooms, bamboo shoots, nori & fresh scallions. amazingly delicious—especially the pork belly & mushrooms. the broth got its rich flavor from the pork bones that simmered for hours in the pot.
